ABOUT US
Zuilen78 is a pop-up restaurant concept created by Lindsey Ritchie and Lenette Vlasman. The name reflects two origins: Zuilen, the neighbourhood we both call home and 78, a reference to the tram line that Lindsey lived along in Melbourne. The concept is inspired by Melbourne’s wine bar culture: shared dishes paired with great wines, generous hosting, and an atmosphere that feels personal rather than transactional.
Just like the dishes, tables at Zuilen78 are shared. You might be sitting at a table with people you don’t know yet. The perfect opportunity to change that! Don’t hesitate to book solo, as you’ll always have table companions to share your experiences and conversation with.
MENU (JUST A GLIMPSE)
ON THE TABLE
1. Little Pour
We begin as many Melbourne evenings do: bread on the table, small warm snacks, and a first glass of wine. Salty, smooth, with a touch of smoke and fresh citrus to gently open the evening.
2. Light & Fresh
Small dishes with plenty of color and contrast. Fresh herbs, ripe vegetables, soft avocado, a bit of spice, and a hint of the sea. Light, vibrant, and meant to be savored together as the table slowly fills.
3. Cream, Salt & Sweet
A brief pause in the pace of the evening. Creamy textures, warm Mediterranean flavors, and the interplay between savory, sweet, and decadent. Delicate dishes across the table that invite you to pour yourself another glass.
4. Big Pour
The moment when everything comes together. Large platters to share: slow-cooked meat, roasted vegetables, herbs, and grains. Food made for long tables, full glasses, and conversations that grow louder and louder.
5. Sweet Goodbyes
Something sweet to finish. Choose one dessert – from fresh and citrusy to rich, dark chocolate – as the evening slowly winds down.

For our first edition, we are setting up shop at De Bees Hive in Zuilen, Utrecht. Their intimate restaurant provides the setting for an evening of shared dishes, good wine, and even better conversation. A collaboration that brings Zuilen and Melbourne together!
