Zuilen78 is a pop-up restaurant concept created by Lindsey Ritchie and Lenette Vlasman. The name reflects two origins: Zuilen, the neighbourhood we both call home and 78, a reference to the tram line that Lindsey lived along in Melbourne. The concept is inspired by Melbourne’s wine bar culture: shared dishes paired with great wines, generous hosting, and an atmosphere that feels personal rather than transactional.
Just like the dishes, tables at Zuilen78 are shared. You might be sitting at a table with people you don’t know yet. The perfect opportunity to change that! Don’t hesitate to book solo, as you’ll always have table companions to share your experiences and conversation with.
MENU @ Vogelfrei
Expect a menu with influences from Southeast Asia this summer. We start fresh and distinctive with crispy pani puri, a tuna crudo with yuzu ponzu, capers, and shiso (or a vegetarian version with daikon), and a fresh green mango salad. Then things gradually get richer: sticky Thai eggplant; soba noodles with pork belly or tofu; and crying tiger beef or a vegetarian version with mushrooms. Of course, Lindsey’s famous chicken wings won’t be missing either! Every single dish has a vegetarian option. And as you’ve come to expect from us, we’ll close the evening with a table full of desserts to share – from a spicy mandarin cake to a dark chocolate parfait with miso and macadamia.
The dishes are not served in fixed courses, but the menu is comparable to a five-course dinner.

For our second edition we are setting up shop at Vogelfrei in Utrecht. At Vogelfrei they encourage people to try their crazy ideas to make this world a little bit better. Here you'll find stories of free birds who have tested concepts, tried a project or started their side hustle. Vaste Grond is their 'pop-up restaurant festival', with a different pop-up each week!
